Chefs Justin Ahn and Alex McCoy began their culinary venture with Alfie’s as a pop-up in 2016, not anticipating the journey to a permanent location would span nearly a decade. Initially serving northern Thai cuisine to a dedicated local clientele in Washington, D.C., the duo's concept quickly gained traction, leading them to operate pop-ups across various cities worldwide before finally securing a fixed venue in Georgetown.

A Unique Georgetown Location

Now settled into a charming, 25-seat venue tucked away in an alley off M Street, Alfie's combines Thai flavors with Mid-Atlantic ingredients and a selection of natural wines from Virginia. The ambiance reflects the scrappy, energetic essence of their pop-up days, featuring a chalkboard menu that adapts based on seasonal local produce. In a recent conversation with McCoy, he shared insights into how they’ve retained the essence of the pop-up model while establishing a brick-and-mortar presence.

Evolution of the Concept

Initially, the pop-up served as a testing ground for the chefs, allowing them to train staff and refine their menu while co-developing their permanent restaurant space. "We thought it was a great opportunity to train our staff, test the food, and work through the menus while our spot was in construction," McCoy recounted. Despite its short six-month run, the pop-up became a cult sensation, receiving accolades from publications like Vogue and Bon Appétit.

Lessons from the Road

Traveling extensively for subsequent pop-ups not only kept the brand alive but also shaped its identity. The experience abroad, particularly in Europe, influenced McCoy's determination to keep the operation intimate and efficient. Post-COVID, the hospitality industry faced new challenges, prompting a shift toward simpler service models with less staff. McCoy’s understanding of European dining culture played a significant role; he noted, "Chefs don’t own six or seven restaurants; they’re in there with one or two people. That was the heart and soul of what Alfie's always was."

Keeping the Pop-Up Mindset

The spirit of the pop-up lives on in the current restaurant setup. With a small team of just three working nearly all shifts, they maintain close control over each dish served. "From a cooking perspective, twenty-five seats is perfect because it gives us this opportunity to really focus on small batches of food," McCoy explained. They assess their daily menu, incorporating fresh local ingredients, which allows them to be flexible and creative in crafting dishes.

Emphasizing Local Ingredients

The approach extends to their drink offerings as well, focusing largely on Virginia wines. "When you go to regions like France or Italy, you drink what’s produced locally," McCoy stated. In an effort to popularize local wineries, Alfie’s features wines primarily sourced from Virginia. Additionally, their pricing strategy aims to make dining accessible without compromising on quality; most bottles range from $35 to $75.

Community Connection through Wine

Alfie’s also champions community engagement with its wine club, catering to regulars who desire a more personal touch. For a monthly fee, members receive their own wine rack at the restaurant. McCoy emphasizes this initiative strengthens the relationship between patrons and the culinary space, aiming to create a welcoming atmosphere that feels like an extension of the guests’ own homes.

A Promising Reception

Following the release of initial reservations, Alfie’s experienced an impressive influx of 700 bookings, reflecting a promising start. While McCoy admitted he hoped for such enthusiasm, he also acknowledged a certain intuition within the industry about timing and public interest. "You can feel when something is gonna hit," he remarked, referring to the buzz surrounding their return.

Filling a Void in D.C.'s Dining Scene

Alfie’s aims to address a gap in D.C.'s dining landscape that has emerged in recent years, countering the trend of local favorites being replaced by larger corporate entities. McCoy envisions the restaurant as a casual, intimate space where diners can enjoy a personal connection with the staff. "You walk in, and Justin and I are in the kitchen, so we can say hi to you and run food to the table," he concluded, hinting at the refreshing vibe that Alfie’s brings to the city.
